1 dried New Mexico Chile or other dried hot pepper, rehydrated in hot water for 20 minutes, seeded or not
small amount of olive or canola oil, for pan
1 small white onion, peeled and finely chopped
1 garlic cloves, peeled and finely chopped
1 tsp ground cumin
1 tsp dried oregano
1 15 oz can whole plum tomatoes in juice
salt and pepper, to taste; tomato sauce may be salty

Remove ground beef from the refrigerator 10-15 minutes before cooking unless your kitchen is extremely warm.

Boil a cup of water in the microwave. Rehydrate the dried pepper for 15-30 minutes until soft. Cut into small pieces or leave in larger pieces if you wish to remove it later.

Heat a large, heavy-bottomed pan over medium heat. If using a metal-bottomed pan, add about two teaspoons of oil. If using nonstick, you may not need oil.

Add the ground beef to the pan, breaking it up and stirring with a spatula. Cook for 3-5 minutes until browned.

Decrease the heat and blot excess fat with paper towels or pour it into a heatproof container.

Add the rehydrated pepper, garlic, and onion to the pan and stir.

Add the cumin, oregano, tomato sauce, salt, and pepper. Be cautious with salt as the tomato sauce can be salty.

Simmer for 10-15 minutes.

Taste and adjust seasoning with lime juice and salt if necessary. Top with cilantro or parsley and serve with desired accompaniments.
