
This simple side dish of sauteed spinach with garlic is quick to prepare and pairs perfectly with grilled or roasted meats, fish, or pasta. With just a few ingredients, it delivers a delicious garlicky flavor that complements any meal.

1 lb baby spinach, washed and well drained
10 garlic cloves, whole cloves for easy removal
1 tsp crushed red pepper flakes, optional, to taste
3 cup extra virgin olive oil, divided

Step 1
In a large pan, sauté garlic cloves in 1/4 cup of extra virgin olive oil over medium-low heat until golden brown. Remove the garlic and set aside.
Step 2
To the same pan, add crushed red pepper flakes. If desired, adjust the amount based on your spice preference.

After 30 seconds, add all the spinach to the pan. Stir with tongs to coat the spinach with the garlic-infused olive oil.

Cover the pan with a tight-fitting lid and let the spinach wilt for 2-3 minutes.

Remove the lid and toss the wilted spinach with tongs. Season with salt to taste.

Plate the garlic-sauteed spinach and drizzle with extra virgin olive oil. Serve the sautéed garlic cloves on the side.
